Each year around “La Festa di San Giovanni” (June 24th) is a great time to make Nocino! This year we picked these Persian green walnuts earlier than normal because the year before the walnuts had already started to harden quite a bit around the 24th of June. The recipe is pretty simple. Some of our favorite spring produce is starting to show up in the markets. You’ll find artichokes fried golden with salsa verde & arugula on our menu. The asparagus salad with burrata is a fun way to try the herbaceous perennial plant. Soon, fava beans and english peas will make there way into our soup and pasta.
